Many of you have expressed interest in the healthy little cookie recipe. As you know I'm not one to follow a recipe, so I make these a little different every time. I'll make notes where I've deviated in the past.
1/2 cup cashews (I've never messed with this)
1/2 cup sunflower seeds (never messed with this either)
1/2 cup pumpkin seeds (I've made without and replaced with other nuts)
1/2 cup coconut (don't mess with this, but feel free to add more/less)
1/2 date paste (add more/less depending on desired sweetness)
1/2 cup almond butter (or cashew, peanut, or mystery butter - all good)
1/2 Cacao nibs (don't mess with this)
2 TBS of cacao power (if you want them extra chocolaty - either or for me)
1 banana (optional, but good for consistency and moisture)
2 TPS apple sauce (optional, but good for consistency and moisture)
1 TPS honey (optional for added sweetness)
I think that's everything. Put all items in a food processor and mix until everything is the same consistency. Roll into little balls and slightly flatten them on a cookie sheet. Then, back in the oven at 375 for about 10-12 minutes (until edges start to turn brown). Then be patient. Do not attempt to remove these from the cookie sheet, or eat until completely cool. They will fall apart if you disturb them too early. This will make 12-15 cookies depending on how large you make them. ENJOY this tasty treat my little cookie monsters!
